Ina Garten's no-cook summer pasta — review
Ina Garten’s summer garden pasta is almost entirely no‑cook: you only need the stove to boil the noodles, while cherry tomatoes, basil, garlic, and olive oil are left to marinate at room temperature for about four hours before tossing with pasta and Parmesan. Two reporters, Erin McDowell and Anneta Konstantinides, tested the recipe and pared it down for a smaller portion.
The dish uses just five main ingredients — pasta, Parmesan, cherry tomatoes, minced garlic, and basil — plus good olive oil and basic seasonings: salt, freshly ground black pepper, and crushed red pepper flakes. The testers halved the recipe and used about half the olive oil Garten recommends; they also noted that jarred minced garlic is acceptable, as Garten says, “store‑bought is fine.” Anneta tried angel hair while Erin used spaghetti; both worked, with angel hair keeping the dish light and spaghetti making it more filling.
