Chipotle and Cava are thriving as consumers prioritize value
Americans are eating out less and scrutinizing every restaurant purchase, concentrating spending on a smaller group of perceived winners. Fast-casual bowl-and-salad chains such as Chipotle and Cava are pulling ahead amid a K-shaped economic recovery. Consumer Edge describes a "barbell-shaped recovery" in which diners either trade down to value quick-service or trade up for experiences seen as worth the price, squeezing the middle.
In that environment, Chipotle and Cava have regained momentum through menu innovation and improved value perception, as consumers shift larger-ticket restaurant spending toward higher-quality customizable fast casuals while allocating more of their food budget to groceries.
Both companies have leaned into the shift. Chipotle’s recent menu moves include a high-protein lineup, chicken al pastor, cilantro-lime sauce, and the return of Chipotle Honey Chicken, and the chain has kept pricing below inflation to reinforce its value proposition.
